why i love wooden cutting boards

i like to cook, and i love wooden cutting boards because
  • they are bacteria resistent (yay for health!)
  • they don't take the edge off of knives (esp the end grain variety)
  • you can put hot things on them without them melting or spreading the heat around too much
  • they look nice
  • chopping on them produces a nice, non-irritating noise
  • working with natural materials somehow comforts me
  • they look nicer than plastic

Is this even true when you smother them in cows/pigs/chicken blood?

(Of which, this is why you should have two boards, one for meat, and one for veggies/pastries/etc)

yes, even when used for animal matter.

however, you still need to clean them (of course) and you certainly should have one for meat and one for vegetable matter when cooking with both at the same time.

seeing as i don't eat meat this isn't an issue for me, though i do have two boards for practical reasons.

I don't have anything against plastic chopping boards per se. I have a few plastic ones that do a very nice job, but it depends a lot on what kind of plastic they're made of and the texture of the surface. A lot of them are crap though.

The biggest plus point with wooden chopping boards though is you get a good level of grip out of them. Every plastic board I've had (although they've been good in most respects) has had a tendency to slide around on your kitchen benches when you're chopping/cutting - not good. Wooden chopping boards stay stable when placed on just about any kind of surface, so if I have a big, heavy-duty job on - wood it is.

Love all your reasons for using a wooden board- I've been looking for a study that supports our belief that wood harbours less bacteria than plastic. Know of any offhand? Also if anyone has a problem board (wooden or plastic) that slides around the bench, dampen a few paper towels or a dishcloth and place it under the board for stability.
